Makes about 40 tots
INGREDIENTS
3 large heads broccoli
1 cup vegan egg replacer (we used and love Just brand; use 3-4 reg. eggs for non-vegan version)
1 heaping cup bread crumbs
3/4 cup vegan parmesan
1 tsp. garlic
Salt and pepper to taste
WHAT TO DO
Preheat oven to 400, with two racks on upper thirds of oven. Set a large pot of salted water on the stove to boil on high. Meanwhile, chop broccoli into large florets.
When at a rolling boil, add broccoli and cook for 3 minutes.
Drain broccoli and rinse with cold water to seize the cooking.
In large handfuls, squeeze broccoli to draw out as much water as possible.
Mince squeezed broccoli. Pea-sized and smaller is an ideal size! Add to a large mixing bowl.
Add vegan egg, stirring to combine. Then add breadcrumbs, parm, and spices. Mix well. Mixture should stick when squeezed together in your palm.
Scoop a ping pong ball size of mixture and form into a ball, tot shape, or oval (whatever really floats your boat) and place on a lightly greased baking sheet. Place tots about 2 inches apart on sheet (too close and they'll steam each other instead of crisp up!)
Bake for 10, then flip, and then bake for 7 more minutes.
Remove from oven and serve it up with a lil vegan mayo/ketchup/hot sauce combo.
